Easy Meal Prep - Vegetarian Egg Muffins

Two Delicious Egg Muffin Recipes

Ok, so besides the cheesy image above, I just wanted to share with you guys a quick, easy, and yummy breakfast meal prep I do often.


vEGGie Muffins


Ingredients -

  • Eggs, Broccoli, Onion, Red Potatoes, Mozzarella Cheese
  • Breakdown:
    • 137 Cals
    • 16g Net Carbs
    • 3g Fat
    • 8g Protein
    • 3g Sugar

mEGGSican Muffins

(Cheesy name, I know... haha see what I did there too?)


Ingredients -

  • Eggs, Black Beans, Red Potatoes, Tapatío, Mozzarella Cheese
  • Breakdown:
    • 110 Cals
    • 14g Net Carbs
    • 3g Fat
    • 6g Protein
    • 1g Sugar

Instructions


  • Preheat Oven to 400○ F
  • Finely chop up 4-6 Red potatoes, 1 stalk of broccoli, & 1/4 an onion
  • Heat up a can of black beans on the stove until tender
  • Layer your ingredients inside the pan to your liking
  • Mix Unsweetened Original Almond Milk (1 tbsp) with each egg
    • I used about 6 eggs for the entire pan
  • Add hot sauce to half the pan and cheese on all of them
  • Pop in the over for about 20 minutes
  • Voila! You're done :)
